In September, Michelin Bib Gourmand award-winning Gunpowder will hold a Goa Food Festival at its Soho and Tower Bridge restaurants.

From Sunday September 4 to Sunday September 11, the festival will celebrate the diversity of Goan, Konkani, Malvani and Karavali culinary cultures that make up much of India’s coastal cuisines, which, in turn, have been influenced by the domination historical portuguese.

Naturally, seafood will be the star ingredient throughout the festival, which Gunpowder will treat with the same provenance and seasonal approach that it uses for all of its dishes. So expect a day-boat, line-fish caught daily and prepared with a delicate touch.

Smaller dishes include Maldon rock oysters topped with frozen hibiscus and cashew arrack granita, raw scallop chaat served with solkadi and tuna croquettes served with chives and sambal de marinated tomatoes.

Larger plates include a new version of the traditional Goan xec xec velvet crab that will be served whole with cockles, as well as recheado Cornish mackerel – grilled mackerel dressed in a fiery Goan masala with tangy radish.

Meat lovers can enjoy the charred vindaloo pork chop or feast on a plate of lamb chops covered in xacuti, a complex and rich Goan curry paste.

In addition to the main menu, a short selection of cocktails, created to complement the coastal flavors, is offered.

These include the kokam martini with homemade mangosteen berry concentrate and the ambotic margarita, which is made from Feni, an indigenous cashew apple liqueur from Goa and finished with Gunpowder’s secret spice blend.

The Goan Food Festival will take place from Sunday September 4 to Sunday September 11 at Gunpowder Soho and Gunpowder Tower Bridge.
