Le Cordon Bleu opens its very first restaurant in London

L

he Cordon Bleu, the culinary institution that has trained everyone from Julia Child to Yotam Ottolenghi in its 127-year history, will open its first ever restaurant in London in June.

Cord, which will finally arrive on Fleet Street after slated for an initial launch in summer 2020, will include a fine dining restaurant, cafe and a branch of its teaching operation.

The 90-seat restaurant will be open Monday through Friday, offering an à la carte menu of the day, a set lunch changing weekly, and a variety of tasting menus at dinner. Dishes will range from hand-picked crab meat, cucumber, rhubarb and radish marmalade with herb toast, brown crab vinaigrette and watercress oil, to marinated sea bream, with corn guacamole, candied lemon, grilled corn and marjoram.

For dessert, diners can expect the likes of hot steamed Muscovado sponge with spiced cherries, fig leaf ice cream and green pistachio, or candied ginger panna cotta with rhubarb and rose meringue, served with strawberries and mint, shiso foam and buttermilk sorbet.

The wine list – which is expected to expand its catchment area beyond French vineyards and into Spain, Germany, Italy and the Americas – will be used for a range of offers by the glass, as well as pairings wine dishes. Sobers can opt for tea pairings with their food instead.

The daytime café, open from 7 a.m. to 5 p.m. Monday to Friday, will welcome customers for dinner and will offer take-out meals. French pastries and pastries – croissants, peach and raspberry tarts, apricot brioche crumble and more, all freshly baked on site – will be available alongside light snacks ranging from sandwiches to homemade soups.

Master chefs from London’s Le Cordon Bleu institute will be on hand to lead a series of short gastronomic courses on world cuisine, food and wine pairings and baking.

CEO and President of Le Cordon Bleu, André J Cointreau, said: “At Cord, we aim to deliver craftsmanship and quality, combining unique techniques and the freshest, best seasonal ingredients in the kitchens of the whole world.

“Our guests will join us on a journey to experience first-hand the exceptional level of skill of our talented chefs while enjoying a warm and expert level of service in a relaxed setting.”
